Dulce de camote crystalizado
2 1/2 pounds sweet potatoes, cinnamon, 2c milk, sugar/confections sugar
- Wash, peel and cut sweet potatoes into even pieces.
- Prepare the lye or lime whey as follows: add two liters of water to a medium piece of lime, let it dissolve, the liquid that will be obtained will be the lime whey.
- In a container, place the sweet potato pieces and add the lime whey, let stand for a period of three hours, then remove the sweet potato pieces, wash and drain until dry.
- Immediately cook the sweet potato pieces in water with sugar, until they have a soft consistency. Remove from the heat and when they are dry, place them in trays with parchment paper. Bon Appetite!
